Recipe #001 - Butternut Squash and Crab Bisque

When I worked in the city there was nothing I loved more on cold wintery days than to sample the soups at places like Hale & Hearty and Hot and Crusty. Their soups had made me feel shame for ever claiming to have had soup before. Rich and flavorful, they were always super thick and filling and on really cold weekends when I could not bring myself to schlepp into the city for a bowl of soup, I tried HARD to mimick what I tasted and guys, I think I may have finally come close! This is my version of a super yummy butternut squash and lump crab meat bisque.

For Starters You Will Need:

2 to 2.5 lbs of butternut squash (peeled, cut and cubed into 2 inch pieces)
1 - small onion finely diced                                                                    TOOLS:
1- celery stalk finely diced                                                                     4 qt pot
1 cup of heavy cream                                                                            Large Spoon
1 lb of the best lump crab meat you can find                                           Ladle
1 can of Chicken Gravy (low sodium)                                                    Hand mixer
salt                                                                                                        Sharp knife for peeling and chopping
pepper
1 stem of curly parsley (for garnish)
1 stem of mint (Garnish)
1 pack of Sazon con Culantro

1. Take the 2-2.5 lbs of butternut squash, peel and slice into 2 inch cubes. Place into a pot to bowl in 1.5 quarts of water. Add the can of low sodium chicken gravy to this and let the butternut squash stew down.

2. While the squash is boiling dice the small onion and celery and add it to the boiling butternut squash.

3. Coursely chop the parsley and the mint and set it aside.

4. When the butternut squash is completely soft, (a lot of the water should be evaporated), there should be more squash then sauce in your pot. If the squash is still swimming in water and chicken gravy pour half the liquid out that is still in the pot.

5. Take a hand mixer and puree all the contents of the pot until you have one smooth looking orange mush. Add the 1 pint of cream, the envelope of sazon and the crab meat. Let that continue to simmer on low heat for another 10 minutes.

6. At this point the soup is very flavorful, but we all have different palates so use the salt and pepper to adjust it to your liking if it is needed.

7. Serve hot, and garnish with a pinch of celery mixed with mint. (Smells amazing!)

TIPS:
- The more you let the soup cook after the cream and meat have been added the thicker it gets, stop boiling when you reach the consistency you want.
- Don't feel like buying sazon for just 1 packet? Don't! You can use salt and pepper. Your soup might be a little lighter in color than mine without the extra added seasoning, but it will be tasty just the same!

Allow Me To Re-Introduce Myself

Hello everyone! It's me, The Culinary Conquistadora blogging to you live from the confines of my bed. No, no, nothing is wrong at all. I am just trying to touch base with all my messages before I get up and start the day. I have been really busy thanks to so many of you ordering, tasting, and more importantly ordering ;).

I have decided to take this website a different route than initially intended. I was going to just make this a hub for e-commerce but I think that I prefer a friendlier approach. Pretty soon I will be posting recipes, culinary adventures, and tagging you along when we get special requests and parties.

A little about me? I am currently a domestic engineer who like Brian from Family Guy has been writing a book forever! (More on that later), but once upon a time I got really tired of the same ole slop for dinner, so I decided to play restaurant and began to COOK. I wanted food I served to look just like what I pay for in restaurants, complete with all the bells and whistles of presentation. As friends and friends of friends came to visit more often because "they heard I could make such-and-such really slammin'" my food bill began to rise. I have gotten requests from cooking lessons to cooking daily dinners. While I would love to do it all, being a domestic engineer does not pay very well, and AT&T does not want to be paid in good intentions. In the immortal words of Kelis: I could teach you but I have to charge. So here I am, and there you are. My growing menu is off to the left there for you to check out.

When we need homemade nostalgia to gracefully walk across our tongue we conjure up the sugar gods to bestow upon us Chocolate chunk cookies! -Or as we affectionately like to call them Triple C! Pasteles made of Yucca, or cassava are based on the original pastele carribean recipe. The pasteles made from hand grated Yucca are a delicacy, and good ones are a rare find! Yucca Pasteles have a lighter flavor. It takes a lot more work to put together to succulent perfection than other pasteles made in our kitchen, but they are so worth it! We pack this yucca base with pollo/chicken, olives, capers and the typical pasteles herb and spices to compliment the Yucca in flavor. They come frozen and ready to cook in a pot of boiling water with a little salt.

Pasteles made of Masa, or bananas are examples of our great grandmother's ingenuity. When Yucca crops were bad, our fore-mothers did what they did best - improvise! On tropical islands bananas are abundant, and to feed your family you make do with what you have. The same recipe your great-grandmother had in her head to pass down to your abuelita and perfected in the mother-land of Puerto Rico. Only hand picked herbs and spices, homemade Sofrito, and carne seasoned with extra care to compliment the genao masa. This handmade pastele is filled with chicken, (no pork products), olives and capers.
